Anyone have an easy enchilada recipe that they've tried and is more or less idiot proof?

Cook your protein (chicken, pork, beef, crab etc.) with Mexican spices. Add onions or peppers if desired. Use large canned enchilada sauce (green for white meat or fish, red for beef). Preheat oven to 350 degrees. Spray baking pan with Pam. (this gets messy) Using large flour tortilla dip in enchilada sauce then fill with meat and roll up. Continue until you fill up pan. Pour remaining sauce over filled tortillas. Top with shredded cheese such as Monterey Jack or Mexican blend. Bake about 45 minutes until nice, hot and gooey. Cover with foil if it gets too brown. Top with sour cream. You can spice it up by adding jalapeno or chipotle peppers.
