The darker stuff is good for allergies...specially if its local honey. I have some that is almost as dark as molasses....not really good for anything other then straight spoonfuls out of the jar lolI bought a bright orange labeled honey that tastes really good, it's a darker honey than I have been buying. I remember reading a few years ago about how some archaeologists dug up a well-preserved ancient Egyptian pot of honey that was still edible. I had no idea it lasted that long.would have been just fine, it's very very hard to spoil honey, if it's kept right it will last thousands of years
