some things seem to be made for a slow cooker and some not. A good size pork butt makes for some decent BBQ that will take days to finish eating

thats the main thing i hate putting in slow cookers. Electric smoker takes about the same time

Crock Pot used to be my go to... but I didn't like what it did to texture of a lot of stuff. Then we got an Instant Pot pressure cooker. It is still just as lazy to cook with but now everything gets done in minutes instead of hours. Food doesn't get mushy and spices/flavors go a lot further/are a lot stronger.
