I mean I get that amazon gets a tiny bit of extra interest through holding the money for longer, but I have a hard time believing it's worth how much it would bother the workers. Has there been any collective effort from the workers to undo this?

They were originally going to force the change to be a 7 day minimum but then after some complaints they ended up switching it to 3 days about a month before the change to the new payments system went through and we collectively said "fuck it, that ain't too bad then" and just kinda adjusted.
