I've been flirting with the vegan idea. Was looking for vegetarian recipes as a starting point yesterday--almost all of them included heavy amounts of cheese. Vegan might be more difficult than I thought
If you aren't vegetarian I'd try that first before going vegan. It is quite an adjustment for most. I've been veggie for 27 years so vegan isn't too hard but I can't do it all the time.

well, we usually buy a side of beef from a local farmer, and/or go to mexican grocery stores. This particualr Prime Rib was heavily discounted to being almost out of date. So knowing that I Sous Vide it for 9 hours at 134F, smoke it for about 10 minutes, then sear it finished.

BTW how is that Sous Vide cooking. I've read about it and have always wondered if it's as good as people say it is. Was debating on getting one of those thingies.

I love it, totally worth it imho. 75% of the time I do that with meat, the other 25% is usually smoking meat, or slow cooker stuff. But I love to cook

It's not much different than any slow & low cooking method. It's just extremely consistent/even. But, if you use a 'roasting bag' and a convection oven at low temp, you can simulate it. It's not exact but, close.:)

EDIT It doesn't dry out like other slow/low

Does the meat come out tender?
yea, it keeps the meat very moist and break down the tissues nice and slow. Night and day from grilling and cooking on the stove where the meat tends to dry out
