chicken in a pot roast is amazing. it's just similar to a beef pot roast

the meat gets tender, etc

and then i dip the chicken in tabasco sauce or put it on the chicken after it's out

Haddock avocado quinoa bowls. Salmon probably would be better, but I got a good price on the haddock.

That's tommorow for me. I'm making a burrito casserole with my random 3 tortillas, leftover habichuelas,some yellow rice, the assorted shredded cheeses I have, and leftover shredded chicken. Oh, and leftover enchilada sauce I made last week. So, I guess it's maybe an enchilada casserole?
