So I was reading a recipe today that was for Mango something or other, but the ingredients list said "Mango or Apricot juice"

I have my doubts that Apricots taste like Mangos, but maybe if you tell people "it's Mango" they will accept it.

Reminds me of the jello experiment we did in school, the teacher offered us different flavors of jello, purple and green,

but the flavors were actually like orange and Cherry. It was a psychology class, the lesson is that your brain believes what it wants to believe.

this has been an fun, educational comment to help you pass the time.

Or maybe it was neither and It just stole your time.

Anyway, I'm sorry, please continue as you were.

To me, apricot preferable. I'd rather my fruit didn't taste like fish.

Depends greatly on your sources, ripeness and varietal of both mango and apricot. That's before any processing, which may happen if you purchase in juice form. Apricot juice would be my substitute, if I were substituting. It's not far off. And, I think with a few pine nuts pureed in, it would be indistinguishable. Mango's flavor profile is pretty much apricot + pine notes. Some(most)mango juices are either really flat in the pine category, or are cut with other juices, which dulls the flavor. So, yeah. In a blind test, I'd say 50% of trained, experienced chefs, would be guessing between apricot and mango purees. Plus, apricot is less used these days. So, like you said, most people's brains will jump to mango before apricot, just out of habit.

Tl:dr
Apricot would be a chef approved substitute for flavor profile and water content.:)

Also, if you want to trick someone, give them apricot to taste, then have them guess. Then tell them it was apricot. Next, have them taste apricot again. Tell them to guess what it is this time. But, while they're tasting, pinch a pine nut under their nose. Guaranteed to get a mango "false positive".

EDIT Stay away from most dried apricots(especially from California). They usually have a super high sulfur content and will ruin most everything you put them in, except for maybe oatmeal.:)
