Even if they start that early they need a wee bit of time to ramp up to research. Well, undergrads will.

Grads generally don't take time off from research so the months don't make much difference to them when collecting data, unless they're recruiting from a college or school campus

I think it all differs. A few start earlier, but here is a graph of our UC system here. Some in August, but most later in September:

But I do stand by my earlier comment that starting school doesn't mean you're starting data collection on your research that early unless you're a grad student or did work over the summer.
