I used to boil them like @stugatz99 mentioned but for small #s this method produces a nice light texture -- silky egg white, fluffy yolkI am going to try this with very fresh eggs. If it works with them then it's the golden touch.
I buy eggs from a neighborhood kid who sells them (he has chickens in his back yard). But when I make devilled eggs I always have to get store bought so they'll peel.
