I mean I get that amazon gets a tiny bit of extra interest through holding the money for longer, but I have a hard time believing it's worth how much it would bother the workers. Has there been any collective effort from the workers to undo this?

Actually it's not bad once you get started. I was really happy when I went out of town recently and wasn't able to work. Money deposited into my account every 3 days as scheduled. I didn't have to worry about logging in and transferring and such.

It's caused me cash flow problems. I know I can ameliorate that somewhat by restricting my work patterns, but mturk's fast payout contributed to the flexibility of workers benefiting from the platform. The financial control of the worker decreased.

They lost thousands of dollars to a bug so they changed the system (probably). It's unfortunate but there's nothing to be done.
