I always add extra time to it to ensure the submit time at least reflects what the minimum of what the requester expects. Like if the hit took me 5 minutes and it says it should take 30+

Very true. I know there are some requesters who likely do not care about that stuff, but every now and again I see a consent form (or even info in the frame before accepting the HIT) that says submit time can lead to rejections. And honestly, whenever I see those I usually return them lol.
