I've been meaning to make a version of this for dd (she's a big pickle fan . Pickled soups are actually very traditional polish/russian type foods - since it was the 'big' preservative - using the pickled vegetables as a soup just sort of made sense. Also, rather than throw out the brine - it gave folks a secondary use for it (that whole be frugal thing .

I love that you can pickle literally anything. Fruits, vegetables, doesn't matter. And they all taste fantastic.
