So, after the earlier conversation of tacos, (which led to immense hunger) I went and made my 'take' on vegetarian soft tacos, since I lacked typical ingredients. Turned out pretty well. I made a vegetarian cheese sauce and used tri-color quinoa for taco 'meat' seasoned. And then topped it with salsa verde, and plain greek yogurt.
