Roses really are great for you! Rose water is a great ingredient we tend to forget about and rose hips are GREAT for your health! Eat up!
To be fair I said better for you, not necessarily healthy. 90% of the cheeseburgers I eat are made at home and reasonably portioned. Good things in moderation are good.

I recommend washing them but yes! As long as there is no pesticide on them, go for it! The petals are most of the flavour of them and that depends on the shade of them with the darker ones having more taste to them. The white bottoms of the petals are VERY bitter though, so remove those for the best taste.
