They basically tell you when to break, make sure there's enough cashiers working, send folks to take over your station when you break/leave, and count the cash. Also, it'll vary depending on your store, but if someone shoplifts in your line, they'll make you go with the clothed secret shoppers. For whatever reason.

Be mindful of your bob and jackets/purses. I stopped a little old lady from stealing like $80 in expensive salmon she hid under her jacket. She was not happy with me. lol.

I wouldn't judge a position on how happy the people occupying that position seem to be. One thing about people, that seems especially true in retail, is that many will always find a reason to complain or hate their job no matter what the conditions are.

Whatever department you're in, just find things about the job that you enjoy and try to focus on those things. I've found a lot of enjoyment in cashier jobs, even. As shy and introverted as I am, I surprisingly really like dealing with customers, so I could always have fun with that sort of stuff while everyone around me acted like they were miserable.
