ive never seen an apartment complex ask for a tax return. They always ask for paystubs and/or bank statements.

if they ask for tax returns, just tell them what you told us, you make a lot more money now, and show them the proof with bank statements/tax returns.

Emails aren't considered "legal" proof tho (I don't think)

For my kid's medicaid, I am able to use weekly worker reports and a bank statement with Social Services.
