I would scroll to the bottom of the site and look in the fine print for the full name of the payer. Then I'd search on the second site and pick what I felt was best represented by the payer name.

Good to know. Returned many of them because there was so many name variations. Hopefully, it is not a compare of answers amongst mturk workers. It is going to be hard to get mturk workers to submit the same payer ID if everyone approached it differently.

I haven't seen any manuals & guides yet either but that's still an option.

Yup, the instructions did say to use '-" only if the ID didn't come up when getting the error message. However, when there are several name variations doesn't mean that it is not there, it is just under a different name. It is a database. Things are constantly changing so it is a bit tricky.
