Is lasagna your favourite food? It's mine. But not any old lasagna.

More than one occasion, I've come across lasagna with cottage cheese, because the poor, uneducated person confused it with ricotta. I understand the mistake but, I can make lasagna in my sleep.

I made a killer "lasagna" once. It was a layer of sauce, then a layer of eggplant parm(which I also made from scratch), then a layer of "lasagna cheese mix"(ricotta, parm, romano chz, eggs, s&p, parsley). Then I repeated the whole thing 4 times. It was amazing! No noodles. The eggplant replace the noodles. My mouth is watering, lol.

I did it because lasagna and eggplant parm are my 2 fave's. So, I combined them.
