Incredibly fast, easy and healthy. Saute diced onions and bell peppers in olive oil. Scramble eggs in with onions and peppers. Add salsa, sour cream and chives on top. I call it "southwest eggs". Diced onions and peppers can be frozen until you need them.

I had the heat on low to medium. I'm blaming the 10 year old "non-stick" pan. I had nothing to do with it. :frying:

Vanilla yogurt add in granola (I use Nature Valley + Protein) and fresh diced strawberries. So good.
