is that ALL you have? 3 stalks?
The farmer's almanac says you can harvest (don't cut, twist) in the second year if you have enough stalks left to help the plant next year

i have probably 10 smaller, spindly stalks. 3 is the number of thick, long stalks that are like what i'd see at a farmers market and those are what is tempting me to harvest and cook on my second year plant.
