If you set the bar low on cooking whenever you do cook an amazing meal it's remembered fondly. Whenever I cook a horrible meal I cry and then my husband says, "It's okay, honey. Why don't we just go pick something up?" Win.

I love a summer time vegetable garden for this very reason. I didn't have time to plant one this year but we have a great farmers market and my neighbor brings extras from their garden to me.

Sauteed squash, onions and butter. Yum

think of it like meat

its a little tougher but has a lot of flavor, so you gotta cook it right

bonus is that veg skins tend to have more nutrients than the flesh too
