I'd like to have time to make any soup actually lol
Instant pot! lol. My tomato soup was done in like 15m start to finish. Same with butternut squash/potato/carrot-apple - any quick "blend 'em up" soups

oh girl I know, i have it and have hardly used it. But that also requires time to go to the grocery store - i've almost gone to One Meal A day fasting because i don't have time to prepare food lol, so eating once a day is easier. sigh. i miss good food.

I have leftover tomato soup for lunch today :hungry:
I crave grilled cheese, so hard, when I have tomato soup. Also, I love the nuance of tomato soup. It probably sounds silly to most but, I know you'll agree. There's are a few wildly different types of tomato soup(Cream, regular, Gazpacho-style/cold, "tomato water"-type, with or without grain/pasta, etc.). But, within those categories, there are subtle nuances that can differentiate between your mom's and your grandmom's versions. Just little things like, if you add garlic and how you prep it. Or roasting vs not roasting the toms. Tomato soup was something that taught me so much "flavour theory".(like music theory for food, I may have made flavour theory up) I would make it every couple of days, when I was a kid. I started with Campbell's, as a base, then built from there. After about a year of varying Campbell's soup in every conceivable way, I moved on to making my own. Then I started adapting my grilled cheeses. First changing cheese, then adding things, eventually moving on to different cooking techniques, teaching me prep and cooking skills. Tomato soup and grilled cheese was the beginning of my restaurant career and my passion for cooking.:)

tomato soup is soooo versatile and delicious. I agree at so many nuances.

my favorite is roasted tomato and red pepper. nom

Green Giant just started selling 'pre-roasted' cauliflower. It could save you enough valuable time to be able to make soup. Pretty much 'one pot' after that.:)

That made me hungry! I've had so many good tomato soups.... basil-heavy, sweeter, more acidic - and I like texture variations too. And then grilled cheese... the ones I made earlier in the week were gouda/havarti which made for an awesome tangy-nutty-stretchy-melty sandwich :hungry:

I'm all about ease these days so I use an onion/garlic base + san marzano tomatoes + tomato paste + broth and then change up the flavorings.
