I just want to say that lengua is delicious.

I had some for dinner in emtamalados. A good from a small town in Mexico. They are like tamales but made with tortilla instead of masa.
I'm a big fan of Japanese style beef tongue for BBQ because its usually done med-rare and with green onions and salt/pepper. the tacos are pretty good but they overdo it so it falls apart so non-adventurous eaters can have it too :|

I've never tried it Japanese style. I will have to look up a recipe and make it one day.

I usually cook it in salsa verde and make it super soft. Then eat it in tacos.
Or I love to eat it in Pozole but that I should usually pig tongue

I have never had, or heard of lengua in pozole :eek: I'll have to try that. I've used it instead of tripe in Menudo though... b/c well, tripe o.0

(And I'm mostly white, so I gotta fuck something up, right?)

When my inlaws make Pozole they cook the entire pig head in it as well as the regular meat. It is delicious!
