I'm no baking expert, that would be my boyfriend. But from what I've gathered watching him in the kitchen, and from my own late night cookie-baking endeavors, you may have used more cornstarch than usual, which is always a good thing IMO. Makes them a bit thicker, more substantial, chewy, all around better! But it's baking, and I'm a noob...it could be so many things. That being said, I second your original plan or ruthless trial and error. Please reach out if you need a taste-tester!

Cookie thickness. Notes from an old cookie cooker. The thickness of things like cookies can be regulated by the flour used. I found that bread flour makes a better batch of cookies('cept oatmeal cookies, which have their own thickener). It has more gluten and is heavier than reg flour. This is also true of Canadian flours. Flour should also be weighed, rather than measured(not that I do that). Since flour tends to settle too much for a perfect measurement--this is especially true for breads, where measurements need to be exact...never forget that baking is affected by temperatures and climate, too. I won't bore you with a treatise on ovens and oven temperatures, which can make a huge different in baking quality...Never tried cornstarch in cookies...I used to bake 12 dozen chocolate chip cookies(of my own fashioning) at a time. I'd put a big metal cookie tin full of lovely chip cookies on the kitchen counter. And at night I;d hear the tin being opened and closed--my Dad loved chocolate chip cookies.
