I'm pretty sure it's the 2 cups of sugar and not the butter that are going to give you problems.

I use less because I flash freeze my own peaches in the juices I used to steam them. There's plenty of sugar in that, I think I reduce it by a cup. Still sweet, but not diabetic coma.

Oh! I flash freeze those too! It's great to make small batches of ice cream in the winter with. Or pie. Pie is everything.

Definitely nice to really be able to taste the fruit in these things. That's one of the reasons I prefer rhubarb pie to strawberry rhubarb pie, it very distinctly tastes like rhubarb and isn't as sweet.

I love rhubarb. I eat it raw! I do the same for strawberry rhubarb pie, Less sugar, more fruit.
