That looks awesome! A good summer breakfast Maybe one day I will be able to justify buying an ice cream maker to myselfHashimoto's/Hypothyroidism-friendly homemade coconut vanilla coffee ice cream! Tastes like a cappucino!
2 cans 13.5 oz full fat coconut milk
3/4 cup strong brewed drip coffee
1/2 to 3/4 cup monk fruit sweetener (tastes identical to real sugar, but there's nothing about it that's bad for you!)
2 1/2 tsp. pure vanilla extract
Add the coconut milk, coffee and sugar to a pot and heat over medium for five minutes, while whisking. Remove from heat, whisk in the vanilla. Transfer to a bowl and let chill in the fridge completely - at the very least, six hours. Transfer to ice cream maker canister, and add the ice and salt according to instructions. Churn for 40 minutes. Eat at once, or freeze for up to a week. Enjoy!
