I want your opinions, please.

i bought a Protcor Silex electric non-stick skillet a short time ago. The first eggs I tried to fry in them stuck. In order to the the skillet replaced, they are asking me to "...unplug your appliance, cut off the plug, and send a picture, showing the back of the appliance where the cord has been severed..." to them.

Why are they asking me to do that?

So you're not scamming them for a free appliance. If you cut the plug, it will render your current appliance useless (to either use, sell or gift to anyone).

Honestly, you're probably going to have a much easier time returning things through Amazon. If the product is defective they'll send you a label to pay for the shipping back, if they even want it back, and the replacement is going to get there a lot faster than dealing with manufacturers.

well if you don't want to cut the cord, i'd return it to amazon. they are always good about customer service and your replacement won't be contingent on destroying the product
