I think I could pasteurize the eggs first in a sous vide... I might try that later if it's still slow.
That's actually something I've never done... I suspect I'd get addicted to it. I'll be *that guy* that smokes, dehydrates, and sous vides everything.

That sounds delicious.

I'm always afraid of making my own mayo b/c of the raw egg thing :\
I use prairie oysters as hungover cure regularly.
Egg laying hens are so pumped full of antibiotics these days it is incredibly rare to take ill from a raw egg.

Egg laying hens are so pumped full of antibiotics these days it is incredibly rare to take ill from a raw egg.
I'd be far more worried about catching something off the egg's shell anyway.

I am that person. I do not have a smoker yet because I do not have a house yet, but it is #1 on the list of things to get when we get one. #2 is building a pizza/bread oven in the backyard.

That's the worry. Maybe cleaning the egg shells first helps? Idk. I know you can pasteurized eggs in a sous vide so you can make edible cookie dough (idk why you wouldn't just leave out the eggs if you weren't going to cook the cookie dough anyhow, but whatever, that's where I learned it from)

Once you start making your own mayo, aioli, creme fraiche, etc... you'll turn into a total snob at restaurants because it'll taste like shit in comparison.

Now, last night everyone was talking about speeds for HC etc, right? Last night I managed to run mine at 800 for an hour or so without any issue. Now I've got it on, and it's the only script I'm running (turned HF off when the PRE's started rolling in) and I'm racking up TONS of PRE.
