idk how "scratch" it has to be to count as from scratch, but I chopped up some chicken I bought at walmart (boneless/skinless) and dipped it on some shake n bake mix and then baked them.

So. Damn. Good.

Okay you win, close enough for me. Any time you start with whole meat you are miles above a "food service" supplied nugget. Shake n bake can be heavy on the salt content, but you can control the coating level. So good on you. Another way is to start with a base like a beer batter mix for frying - but over season and use almost no liquid. Give a quick dip in egg or milk, coat with mixture and bake on a sheet. Hope that makes sense.
