Enclosed+heat=pressure, and pressure can get away from you remarkably fast. Hense, spaghetti on the ceiling. You follow the rules. I used 2 huge pressure cookers for years with no problems. I never left them alone. I watched the gauges. My mom used several smaller ones to sterilize jars for jam. I needed the larger size to sterilize larger jars for sowing orchid seeds. We were pressure cooking fools!

I never cooked actual food in a pressure cooker. To me the taste of slow simmered roast in a iron pot in the oven is far superior to steamed meat. And honestly, even if I followed the 'rules' for using a pressure cooker, the inconvenience of watching it + the fact it can explode is more than enough of a deterrent for me lol. I prefer my cooking easy and pain free. Where is @Jaded and her "preferences yo"
