Seriously, we've done that. There were two dogs that she was able to play with in her aggressive way up until recently. One has moved away (he just packed up and moved if you can believe that), and she literally attacked the second one last week. She's extremely aggressive with other dogs, while still being extremely passive with her humans (or cats). Her idea of playing is to run as hard and fast as she can at the other dog. If the other dog doesn't like that then she's sort of like fuck you. At the first sign of hair on the back going up, or a small warning growl, she goes into attack mode.
We all have this idea that dogs should be friendly and playful with each other but sometimes that's not how it is. I'm not saying don't try to socialize her, but try to keep in perspective she's never gonna be a happy Golden Retriever with other dogs. With people it's different, you have to socialize them because you don't want them biting someone down the line.

But if she doesn't like dogs, then just try to keep her away from other dogs.

keeps getting 'kicked out' of apartments,
etc..
she keeps saying the reason she's gotten fired
(four times in a row now, over three months)
is because 'the manager didn't like her,
and was looking for a reason to fire her'
...
what's probably really going on here?

Any multitude of things might be going on. She might be having emotional problems, or health problems, or attitude problems. Really... the only way to find out is to flag your "gives a fuck" card at her, call a time out, and have some real talk. If she isn't down for that, question how solid/good/intimate your friendship really is.

Oddly enough, snacks is not something I typically buy. Like right now, with this sudden Sour candy phase? I just go out and buy just enough but I don't keep it stocked. Like I don't even buy soda really, but it's rather something I enjoy outside the house. I hardly buy fruit juice either. It's like I enjoy those kinds of things outside the house. Every now and then I'll buy a pint of ice cream or something.
I don't keep sodas in the house ever. I drink mostly water, tea, and coffee. I try not to keep snack cakes because I have no self control. :D But I do keep popsicles, ice cream, popcorn, and we are big fruit eaters so always fruit.

it's always going to be someone else's fault with your friend, just IMO

I'd have to agree with Blue @Blue. I rescued a pup who was totally afraid of everything, and would be aggressive as a result.

Lots and LOTs of socialization. she's improved tremendously in the past year. and I know it sounds cheesy and cesar milany but really going into it with the right frame of mind helps a ton. My pup was afraid of men but I didn't see drastic improvement until I stopped warning people that she may nip. Now she loves all people and tolerates other dogs.
I kind of agree with you, but, she will pick a fight. Just the other night, I took her for a walk and we came up on a guy who had a Rottweiler on a leash. I told him, "She's not friendly", The guy was like, It will be OK. Both dogs were on a leash, so I let them get close. Lucille, wagged her tail and pretended that this was a friendly encounter. She even sat down and wagged her tail. As soon as the other dog did the same, she rather gently (for her) reached out and wrapped her mouth around the other dog's muzzle.

Could be anything. She could be slacking because she hates the jobs, could be a general unhappiness with life, could be drugs, could be alcohol, she could miss a lot of work, etc.

That's really no different than a baby trying to touch a hot stove. Animals (and people) learn through experiencing situations and getting feedback. This includes cluing animals and people in on the whole social contract thing. Find a way to reward the good behaviors you want to encourage.
