Does that make them chunky? I'm weird about textures, and if all of it's smooth except little chunks of garlic I feel like that would be weird.

No. If you use a garlic press (have you ever used one?) the garlic is pretty smooth. Tiny, baby chunks. I insist on my devilled eggs being creamy (texture issues with eggs) and the garlic doesn't mess that up.
